Caprese Salad

Square Egg, Round Bowl


  • 1 head lettuce or bunch mixed greens
  • 1 large heirloom tomato or several small, of assorted colors
  • fresh mozzarella ball
  • about 16 fresh basil leaves
  • several Tbs olive oil
  • several Tbs balsamic vinegar
  • freshly ground pepper

Finely chop a 3-4 basil leaves, and mix together with olive oil and vinegar.  Wash and tear the lettuce, and toss with dressing.  Arrange on salad plates.

Slice the tomato like a pie, into thin wedges (but not slivers).  Array on greens like rays of a sun.  Slice mozzarella and place a piece next to each wedge of tomato.  Place a basil leaf on each slice of mozzarella.

Drizzle a little more olive oil and vinegar on top, and garnish with pepper.  Serve with freshly-baked bread.
